Aurore Casanova ’Aure’ Extra Brut Champagne, France NV
A relatively young house, Domaine Aurore Casanova is already earning a reputation for elegance, finesse, and joyful drinking. Aurore found a rather unconventional path to her winemaking, spending much of her youth as a ballerina. After dancing professionally around the world, most recently with the Zurich Opera House, she returned home in 2011 to take over the family estate in Mardeuil with her partner, Jean-Baptiste. Together, they farm 3.5 hectares across some of Champagne’s most celebrated terroirs—Grand Cru Puisieulx, Mesnil-sur-Oger, Champvoisy, and Epernay—using organic and biodynamic principles. Their mission is simple but profound: to craft Champagnes that make people happy.

Auré is their entry level Champagne, meant to be the most hedonistic, capturing both an electric energy and a comforting creaminess. It is a blend of 45% Chardonnay, 45% Pinot Noir, and 10% Meunier, with one-third coming from reserve wines, which lends depth. The Champagne spends eight months in stainless steel before aging another 2–3 years, resulting in an Extra Brut that’s generous in spirit—brilliant gold with fine, lively bubbles. Aromas of peonies, dusty chalk and ripe white peaches lead to a creamy palate of bruised green apples and fresh pastry, finishing both lifted and luxuriously. It makes for a very enjoyable Champagne just on its own, but will also pair nicely as an aperitif to light foods. —Simi Grewal, DECANT Co-founder
