Manual harvest (majority), full destem, 2–3 week fermentation in concrete tanks at controlled temperatures (18–20°C) with daily pump-overs; complete malolactic; aged in clean concrete tanks before bottling with low sulfur additions, in line with organic practices -

TASTING NOTES
Light-bodied and juicy with a soft structure, this is classic chillable red territory: crunchy red berries, peppery herbs, and a dusty floral note. A bistro wine through and through—meant to be poured freely. -
