The Caslot family has farmed vines in Bourgueil since 1640, making Domaine de la Chevalerie one of the region’s most historic estates. Today, the younger generation stewards the domaine with progressive biodynamic practices (Demeter-certified since 2012) and a focus on transparency of terroir. Celebrated by sommeliers and writers alike, Chevalerie has become one of the great hopes of Bourgueil, producing classically styled yet vividly expressive Cabernet Franc wines.

TERROIR: From several parcels on the upper end of Bourgueil’s long terrace sloping to the Loire. Gravelly, sandy, and clay-sandy soils contribute freshness and accessibility. The cuvée’s name “Diptyque” refers to two parts joined together: sun and soil.

VINIFICATION: Light maceration; fermented with native yeasts. Short élevage of 4–6 months, primarily in concrete vats with a small proportion in older 400–500L barrels. Bottled without fining or filtration.

AGING: Brief maturation designed to emphasize freshness and drinkability.

TASTING NOTES: A classic vin de soif. Bright, juicy red fruits—raspberry, red cherry, cranberry—layered with subtle herbal and earthy notes. Light-bodied with lively acidity, supple tannins, and a fresh, quaffable finish.

FOOD PAIRINGS: Charcuterie boards, roasted chicken, grilled vegetables, or Loire goat cheese. Chill lightly for summer drinking.
