Domaine Sigalas ‘A/a’ Assyrtiko-Athiri, PDO Santorini, Greece 2023
Founded in 1991 in Oia, Domaine Sigalas has built its reputation as one of Santorini’s leading producers, crafting benchmark wines from the island’s ungrafted bush-trained vines. The estate farms organically and emphasizes minimal intervention to highlight the volcanic character of the terroir. With an average vine age of over 50 years, Sigalas produces wines of intensity, salinity, and longevity that reflect the singular landscape of Santorini.

VARIETY: 85% Assyrtiko, 15% Athiri (field blend, co-cultivated and co-vinified)

TERROIR: Old vines (50+ years) planted in volcanic pumice, ash, and lava soils across selected parcels on Santorini. Extreme arid climate, strong winds, and marine influence from the Aegean. Traditional kouloura (basket) training.

VINIFICATION: Hand-harvested with strict grape sorting. Whole-bunch, gentle, extended pressing. Co-vinification in stainless steel under controlled temperatures. Aged 6 months on fine lees with periodic bâtonnage.

AGING: 6 months in stainless steel on lees; ageworthy for 3+ years.

TASTING NOTES: Vibrant lemon color. Aromas of citrus zest, peach, apricot, and lemon layered over saline minerality. Medium-bodied with creamy texture, balanced by fresh acidity and a lingering mineral finish.

FOOD PAIRINGS: Ideal with grilled octopus, oysters, lemon-roasted chicken, Santorini tomato fritters, or tinned anchovies in olive oil.
