Elk Cove Vineyards was founded in 1974 by Pat and Joe Campbell. Winemaker Adam Campbell joined forces with his parents in 1995 and Elk Cove remains proudly family owned.
- Winemaker: Adam Campbell and Heather Perkins
-
Farming: Organic and sustainable practices are employed.
- Variety: 100% Pinot Noir
- Terroir: The grapes are sourced from both young and old vines situated at higher elevations on their own rootstock, contributing to full aromatic and flavor development with great freshness within a framework of lower alcohol. The fruit for this Pinot Noir Rosé is hand-harvested from estate vineyards located in the Willamette Valley.
- Vinification: The Pinot Noir fruit is hand-harvested and gently whole bunch pressed without extensive skin crushing, producing essentially a “white Pinot Noir.” The wine undergoes cool fermentation in stainless steel tanks. Selected lots of fermented red Pinot Noir juice are later added back to the wine for enhanced color and texture. The Pinot Noir Rosé is finished dry.
- Aging: The wine is aged in stainless steel tanks to maintain its freshness and aromatic profile.
- Tasting Notes: Dusty rose in color, the nose features lime peel and pink grapefruit beside hints of dried mango and white flowers. The palate is both juicy and robust with flavors of strawberry, peach hard candy and lime meeting a pithy finish of pink grapefruit, sarsaparilla and rose petal.
