Kabayan Wines, founded by winemaker Justine Osilla, is dedicated to crafting wines that celebrate Filipino culture and community, creating harmonious pairings with traditional Filipino cuisine.
- WINEMAKER: Justine Osilla
- FARMING: Sustainable practices
- VARIETY: 100% Cabernet Sauvignon
- TERROIR: Sourced from the Moon Mountain District in Sonoma County, known for its high-elevation vineyards with iron-rich, loamy soils of volcanic origin. These conditions contribute to the wine's complexity and depth.
- VINIFICATION: Hand-harvested grapes undergo fermentation in stainless steel fermenters for 14 days. The wine is then racked and pressed off to tanks before aging in 50% new French oak barrels.
- AGING: Aged for 12 months in French oak barrels, 50% of which are new, to enhance structure and impart subtle oak nuances.
- TASTING NOTES: Displays colors of dark purple and garnet. Aromas of blackberry, ripe red fruits, and sweet oak lead to flavors of mocha powder, spice, and dark fruits on the palate.
- FOOD PAIRINGS: Pairs exceptionally well with hearty Filipino dishes such as beef kaldereta (spicy beef stew), lechon (roast pork), or adobo (marinated meat stew).
