Firefly Farms "Merry Goat Round" Bloomy Soft Goat's Milk, Accident, MD (6oz)

This fresh goat milk is first pasteurized and cooled to the perfect temperature for bacteria to do their best work. Since goat milk reacts differently to fungi, they fortify ours with Penicillium Candidum (a.k.a. “The secret sauce”).
Vegetable rennet is added, coagulating the milk and creating a stronger curd mass bond, faster, which is then sliced into large sections, drained of whey, stirred, then drained again. From there, it’s scooped into molds, brined, and aged.
During this time, you’ll find Firefly makers continually flipping the cheese to ensure proper moisture and rind development. When ready, it harkens to Camembert or smaller-format goat’s milk Brie, but with a personality all its own.

Ways to enjoy this cheese:
- Top with a favorite jam, wrap in puff pastry, and bake at 350° until warm and gooey.
- Pair with sparkling rosé, a traditional farmhouse cider, or Sauvignon Blanc.
- Serve on a cheeseboard with orange marmalade, marcona almonds, or truffle honey.
