Founded by Elsa and Cédric Ehrhart, Domaine du Chancelier is one of Burgundy’s most exciting young estates, blending deep reverence for tradition with a meticulous, low-intervention philosophy. Based in a restored 18th-century building in the historic center of Beaune once tied to the legacy of Nicolas Rolin and the Hospices de Beaune, the domaine farms organically across owned and long-term contracted vineyards. With gravity-fed cellar practices, native yeast fermentations, and sulfur-free vinifications, the Ehrharts craft wines of remarkable purity, precision, and terroir transparency.

- VARIETY: Pinot Noir (100%)
- TERROIR: From 55-year-old vines in the climat La Rave Nord in Meloisey, within the Hautes-Côtes de Beaune. Predominantly clay soils on a hillside site contribute depth and structure, while the elevation preserves freshness and aromatic lift. Dense vine plantings of 10,000 vines per hectare with simple Guyot training
- VINIFICATION: Fully destemmed fruit; vinified without sulfur using indigenous yeasts. Cold fermentation with gentle extraction and temperature regulation in stainless steel over 21 days to preserve finesse and site expression
- AGING: Long lees aging for approximately 12 months in French oak barrels (10–25% new oak) without bâtonnage or racking until bottling
- TASTING NOTES: Vibrant aromas of black cherry, raspberry, violet, and forest floor unfold into a finely textured palate marked by purity and energy. Notes of crushed herbs, subtle spice, and earthy minerality are framed by silky tannins and bright acidity, leading to a long, elegant finish
- FOOD PAIRINGS: Roast chicken, duck confit, lentil dishes, mushroom tart, or soft-ripened Burgundian cheeses
