Marc Hébrart, based in Mareuil-sur-Aÿ, is one of Champagne’s most precise grower-producers, known for blending power and finesse across Premier and Grand Cru sites. The ‘Spécial Club’ cuvée represents the pinnacle of the estate’s work, produced only in vintages that meet the rigorous standards of the Club Trésors de Champagne. The 2021 is a structured, age-worthy expression built on old vines, long lees aging, and clarity of terroir.

FARMING: Practicing organic. Estate vineyards are farmed with an emphasis on soil health and low yields. All fruit is hand-harvested from mature vines averaging over 50 years of age.
VARIETY: 70% Pinot Noir, 30% Chardonnay.
TERROIR: Pinot Noir is sourced from Mareuil-sur-Aÿ Premier Cru and Louvois Grand Cru, while Chardonnay comes from Mareuil-sur-Aÿ Premier Cru parcels. These sites combine chalk-rich soils with varied exposures, giving the wine both structure and lifted acidity.
VINIFICATION: Fermented and aged entirely in stainless steel with full malolactic fermentation completed, allowing for textural integration while preserving freshness and site expression.
AGING: Aged on the lees for approximately 36 months before disgorgement. Disgorged January 2025. Finished as Brut with a dosage of approximately 5.5 g/L.
TASTING NOTES: Bright yellow in the glass, with aromas of lemon confit, marzipan, chamomile, dried flowers, and smoky wet stone. The palate is medium-bodied but dense, driven by Pinot Noir, with zesty acidity, notable palate presence, and a creamy, refined mousse. The finish is crisp, mineral, and tightly wound, pointing toward further development with time.
FOOD PAIRINGS: Ideal with roast poultry, veal, shellfish in butter sauces, or dishes featuring mushrooms and herbs; also compelling as a cellar-worthy Champagne for extended aging.
