This unique white blend hails from the Thymiopoulos vineyards in the Valley of the Muses, just east of Delphi. With an average vine age of 45 years and the benefit of cooling winds from Mount Helicon, these grapes are handpicked and fermented with wild yeast. Enjoy this biodynamic wine, free from oak.

Terroir / Soils: Slivers of limestone, schist, and volcanic soils. A blend of higher altitude vineyards around the village of Fyteia at 500m asl. Dry farmed.

Vinification: Hand harvested, de-stemmed, and then gently pressed. The free-run juice is fermented in stainless steel with organic yeast. Fermentation begins and lasts for approximately 20 days. No Malolactic fermentation. Fine lees aging for 2 months.
- Tasting Notes: Aromas of fresh citrus fruits, stone fruits and an elegant touch of florality. Crisp acidity balances the oily body texture. The aftertaste is long and refreshing.
