TERROIR: Rocky, stony soils in the Arroyo Seco AVA; influenced by the cool Pacific breezes, which extend the growing season and enhance acidity

VINIFICATION: Hand-harvested, foot-treaded and gently pressed within 2 hours of harvesting. Fermented with ambient yeasts over the course of a month at cool temperatures in stainless steel. Gently crossflow filtered prior to bottling. 55ppm total SO 2 -15ppm free SO 2 prior to bottling to preserve freshness

AGING: Dirty racked once to avoid reduction and aged on lees for 4 months.

TASTING NOTES: Pale pink in color, this rosé offers aromas of alpine strawberry, cherry, ruby grapefruit and oyster shell. The palate is crisp and vibrant, featuring flavors of Alpine strawberry, grapefruit, rose water and sea air.
