Dehours & Fils is a family-run grower estate based in Mareuil-le-Port in the Vallée de la Marne, now led by Jérôme Dehours. Known for their meticulous vineyard work and terroir-focused approach, the domaine highlights the diversity of soils and exposures through parcel selections and long lees aging. “Oeil de Perdrix,” named for its delicate partridge-eye pink hue, is a traditional Champagne rosé crafted with restraint and precision, emphasizing freshness, structure, and mineral clarity rather than overt fruitiness.

- AGING: Extended aging on lees prior to disgorgement; finished with an Extra Brut dosage to preserve purity and tension.

TASTING NOTES: Pale salmon-pink with fine, persistent bubbles. Aromas of wild strawberry, red currant, blood orange, and crushed stone lead to a dry, focused palate with bright acidity, gentle tannin, and a clean, mineral-driven finish.
