Eric Bordelet, a former sommelier at some of Paris’s top Michelin-starred restaurants, returned to his family’s orchards in southern Normandy in 1992 with a vision to elevate cider to the level of fine wine. Guided by biodynamic principles and inspired by close friend Didier Dagueneau, Bordelet’s ciders are expressive, terroir-driven, and crafted with the same reverence as grand cru wines. 'Perlant' is his non-alcoholic, gently sparkling cuvée—complex, refreshing, and naturally vibrant.

VARIETY: Blend of heirloom apple and pear varieties from 40–50 year old trees (3 hectares total)

TERROIR: Southern Normandy; ancient varietals planted on schist and granite soils

VINIFICATION: Apples are hand-collected, placed in wooden cases, and allowed to dehydrate in a ventilated cellar for 3–5 weeks to concentrate flavors. Pressed and fermented slowly. Made without alcohol through controlled fermentation.

TASTING NOTES: Crisp and lifted with delicate bubbles, showing aromas of fresh apple, pear skin, white flowers, and soft spice. The palate is dry and refreshing, with vibrant orchard fruit, subtle tannin, and a clean mineral finish.
