Based in the southern reaches of Champagne in Noé-les-Mallets, Louise Brison is a specialist of the Côte des Bar, farming old vines organically and crafting terroir-first Champagnes with minimal intervention. Working the domaine’s steep, Kimmeridgian limestone slopes by hand, Brison focuses on low yields and long lees aging to reveal the tension, texture, and individuality of this often-overlooked region. Her single-varietal, zero-dosage bottlings are particularly prized for their purity and mineral expression.

  • TERROIR: Sourced from vineyards in the Côte des Bar around Noé-les-Mallets, where Kimmeridgian limestone soils—shared with nearby Chablis—lend pronounced salinity and tension. The warmer southern exposure contributes subtle ripeness while preserving natural acidity.

  • VINIFICATION: Indigenous yeast fermentation in stainless steel tanks; full malolactic fermentation completed. Traditional method secondary fermentation in bottle with extended lees aging. Bottled with zero dosage (Brut Nature).

  • AGING: Aged on the lees for several years prior to disgorgement to build complexity and texture.

  • TASTING NOTES: Bright and precise with aromas of lemon zest, green apple skin, chalk dust, and white flowers. The palate is taut and saline, offering crushed stone minerality, citrus oil, and a laser-focused finish driven by vibrant acidity and absolute dryness.
