Manincor is one of Alto Adige’s most respected estates, a family-run property whose biodynamic vineyards have become a benchmark for transparency of terroir and finesse. The estate’s “der Keil” vineyard is a rare monopole above Lake Kaltern, where old-vine Vernatsch (Schiava) thrives on sandy clay and limestone soils under South Tyrol’s warm southern exposures.

VARIETY: Various Vernatsch (Schiava) family clones from old vines

TERROIR: Sourced from Vigna “der Keil,” Manincor’s monopole vineyard perched at 250 meters above Lake Kaltern. The south-facing slope captures abundant Alpine sunshine and lake-moderated warmth, among the warmest microclimates in Alto Adige. Soils are sandy-clay with high calcium carbonate content, lending minerality and lift to the delicate red fruit profile.

VINIFICATION: Grapes were hand-harvested, destemmed, and fermented in open-top wooden vats, partially with native yeasts. A gentle one-week maceration at 24°C allowed for soft extraction, with daily punch-downs by hand. The wine matured for five months on fine lees in large oak barrels, refining its aromatic and textural elegance.

AGING: Aged five months in large neutral oak barrels on the lees before bottling.

TASTING NOTES: Pale ruby in color with bright clarity. The nose opens with red cherry, pomegranate, and subtle almond, leading to a juicy palate of delicate red fruit and soft spice. Sleek, light-bodied, and gracefully balanced at 12.5% alcohol, it finishes with gentle tannins and refreshing acidity.

FOOD PAIRINGS: Perfect with traditional South Tyrolean speck and cured meats, tomato-based pastas, roasted white meats, or even lightly fried lake fish. Serve slightly cool (53–57°F) for best expression.
