Mercat Brut Rosé, Cava DO, Penedès, Spain NV
Inspired by Barcelona’s Mercat de Sant Josep de la Boqueria—the bustling Catalan marketplace—Mercat Cava is crafted to embody community, liveliness, and tradition. Produced at Molí Parellada in Sant Sadurní d’Anoia (the “Cava capital”), winemaker Francisco Domínguez works with old vines of indigenous grapes, extended lees aging, and disgorgement to order—hallmarks of artisanal quality rarely seen at this value.

FARMING: Sustainably farmed plots, vines 15–40 years old.

VARIETY: 40% Macabeu, 40% Xarel·lo, 15% Parellada, 5% Monastrell.

TERROIR: Penedès (Sant Sadurní d’Anoia). Calcareous and clay soils, Mediterranean climate.

VINIFICATION: Traditional method sparkling; base wine fermented in stainless steel. Secondary fermentation in bottle.

AGING: 18 months on lees (double the DO minimum). Disgorged to order. Dosage: 7.5 g/L.

TASTING NOTES: Pale, bright orange-pink. Aromas of fresh red berries, orange zest, and herbal lift with hints of white pepper. Juicy and vibrant on the palate, showing redcurrant, blood orange, and subtle rhubarb. Dry, sharply focused finish with persistent red fruit tension.
