What is a Passetoutgrain? Historically, most or all red wine growers in Burgundy produced a Passetoutgrain in order to have an easy drinking, every day wine for themselves and their clients so that they would not rob the cradle and drink their age-worthy wines too young. Current times have seen most  growers move towards a softer, easier, more fruit-forward style for all  of their wines, and thus have replanted what Gamay they had with Pinot Noir.

From the esteemed Chevillon estate in Nuits-Saint-Georges, this wine offers an elegant entrée into the domaine’s serious Burgundian reds. Brothers Bertrand and Denis Chevillon carry forward a family legacy rooted in rigorous viticulture and site-specific expression.

  • WINEMAKER: Bertrand and Denis Chevillon 

  • FARMING: Lutte raisonnée 

  • VARIETY: Approximately 2/3 Gamay and 1/3 Pinot Noir 

  • TERROIR: Fruit from three lieux-dits near Nuits-Saint-Georges — Champs d’Argent, Croix Blanche and Petit Chaliot — on clay- and marl-rich slopes with limestone elements, gently sloping and well-drained soils. 

  • VINIFICATION: Grapes harvested from the field-blend parcels, co-fermented; the vintage is described as “fresh and smooth Gamay/Pinot blend” following the domaine’s traditional approach. 

  • AGING: Matured approximately 16 months before bottling.

  • TASTING NOTES: This wine opens with vibrant red cherry and cranberry fruit layered with hibiscus and rose-petal florals; underlying notes of forest-floor, mineral and subtle anise emerge. The palate is medium-bodied with bright acidity, supple yet firm tannins and a discreet savoury finish hinting at game and dried cherry. 

  • FOOD PAIRINGS: Ideal with rustic dishes such as beef or pork skewers, camembert or soft cheeses, œufs en meurette, or a charcuterie board; serve at around 12-14 °C for early drinking.
