An organically farmed expression from Rioja Alavesa, Sierra de Toloño focuses on purity of fruit and minimal-intervention cellar work to highlight the freshness and finesse of high-elevation Tempranillo.
-
WINEMAKER: Sandra Bravo
-
FARMING: Certified Organic
-
VARIETY: 100% Tempranillo
-
TERROIR: Sourced from vineyards in Rioja Alavesa, a cooler, higher-altitude sub-zone known for producing bright, finely structured Tempranillo with vibrant acidity.
-
VINIFICATION: Fermented with native yeasts using a mix of whole-cluster and partially destemmed fruit in concrete and old oak vessels. Unfined & unfiltered.
-
AGING: Matured in used barrels for approximately 6–10 months to preserve freshness and texture rather than impart overt oak character.
-
TASTING NOTES: Aromas of wild red berries, dried herbs, and crushed violets lead to a silky, medium-bodied palate layered with raspberry, pomegranate, and subtle sweet spice, framed by bright acidity and fine chalky tannins.
-
FOOD PAIRINGS: Grilled lamb, roasted vegetables, lentil dishes, or Manchego; also well suited to lightly chilled service with tapas.
