VARIETY: Blend of native Asturian apple varieties (bitter, acidic, and acidulous)

TERROIR: Orchards located in Lavandera, Asturias, characterized by a temperate maritime climate and rich, well-drained soils conducive to apple cultivation.

VINIFICATION: Apples are hand-harvested and fermented separately using indigenous yeasts. Fermentation occurs under controlled temperatures in traditional chestnut barrels, adhering to the guidelines for “Naturally Fermented Quality Ciders.”

AGING: Aged in chestnut barrels to develop complexity and depth, with racking performed during the waning moon to enhance clarity and stability.

TASTING NOTES: Pale lemon-yellow with greenish hues. Aromas of green fruits and subtle floral notes of dried rose. The palate is marked by bright acidity, citrus undertones, and a delicate, lingering finish. Fine and delicate in the glass, exhibiting a good "espalme" (foam).
