Established officially in 1875, Valdespino is one of Sherry’s most historic houses, dating back to 1264 when the conquering knight, Alonso Valdespino, was rewarded with 30ha of land. Today, Grupo Estevez owns and directs this traditionalist gem. The great cru, Macharnudo Alto, is the source for the unequaled Fino “Inocente,” Amontillado “Tio Diego,” and Palo Cortados “Calle Ponce” and “Cardenal”.

  • TERROIR: The 'Tio Diego' vineyard is located in the heart of the Jerez-Xérès-Sherry DO (Denomination of Origin) in southern Spain. The region is known for its unique albariza soils, rich in limestone, which provide excellent drainage and help to reflect sunlight back onto the vines, ensuring the perfect ripening conditions for Palomino Fino grapes. The proximity to the Atlantic Ocean gives the area its characteristic cooling influence, which is crucial for maintaining acidity in the grapes.
  • VINIFICATION: The grapes are fermented in stainless steel tanks before undergoing the traditional fortification process with grape spirits to reach the desired alcohol level. The wine is then aged in the solera system, where it undergoes biological aging under flor for a time, before being oxidatively aged as it develops into an Amontillado. This method imparts layers of complexity, from the fresh, nutty characteristics to the rich, dried fruit and toasty notes.
  • AGING: Aged for several years in the solera system, with oxidative aging after the flor veil has died off. This process allows the wine to develop its unique characteristics, balancing freshness and complexity with notes of nuts, dried fruit, and savory depth.
  • TASTING NOTES: 'Tio Diego' Amontillado reveals a complex and elegant nose of roasted almonds, dried figs, and subtle flor yeast notes, combined with hints of toasted wood and spices. On the palate, it is dry, with a smooth texture and vibrant acidity that balances its rich, nutty flavors. The finish is long and savory, with lingering notes of dried fruit, salt, and a hint of brine, making it an exceptional example of the Amontillado style.
