Vincent Couche, renowned for his biodynamic Champagne, extends his meticulous craftsmanship to still wines from Molesme, a village just south of the Champagne boundary in northern Burgundy. His 'Terre de Molesme' Chardonnay reflects a commitment to terroir expression and sustainable viticulture.

TERROIR: Sourced from vineyards in Molesme, characterized by Kimmeridgian limestone and marl soils, akin to those in Chablis. The cool climate and mineral-rich soils contribute to the wine's freshness and complexity.

VINIFICATION: Hand-harvested grapes undergo spontaneous fermentation with native yeasts. The wine is fermented in a combination of amphorae (30%) and medium-sized oak barrels (70%), promoting purity of fruit and adding complexity.

AGING: Aged for 2 years in the aforementioned vessels, with minimal sulfur usage, to preserve the wine's integrity and expressiveness.

TASTING NOTES: Bright straw-yellow in color, the wine offers aromas of green apple, citrus, and subtle floral notes. The palate is balanced, featuring a harmonious integration of oak, a touch of salinity, and a lingering mineral finish.
