Famille Savary, led by Olivier Savary, is based in northern Burgundy, near Chablis. Known for their exceptional terroir-driven wines, the domaine focuses on traditional and sustainable practices. Bourgogne Epineuil is a standout Pinot Noir from the lesser-known Epineuil appellation, offering a lighter, perfumed expression of the grape.

- VARIETY: 100% Chardonnay
- TERROIR: Premier Cru ‘Vaillons’ lies on the left bank of the Serein River, characterized by steep slopes and Kimmeridgian limestone-rich soils. The southeast exposure provides optimal ripening while retaining hallmark Chablisien freshness.
- VINIFICATION: Fermented with native yeasts in a mix of stainless steel and older oak barrels for added complexity.
- AGING: Aged 10–12 months on fine lees in a combination of stainless steel and neutral oak to balance minerality and depth.
- TASTING NOTES: Aromas of green apple, lemon zest, crushed oyster shell, and white flowers. The palate is taut and textured, with vibrant acidity and a long, saline finish that reflects its Premier Cru pedigree.
