'Les Bulles de Noémie' is their elegant Crémant d’Alsace, crafted from equal parts Pinot Auxerois, Pinot Blanc, and Pinot Noir. This méthode traditionnelle sparkler balances orchard fruit, mineral tension, and fine lees-aged complexity with gentle sweetness and lift.

• TERROIR: 30+ year old vines rooted in the sandy loam soils of Bergbieten, Alsace—providing freshness, aromatic lift, and mineral definition

• VINIFICATION: Grapes are hand-harvested and whole-cluster pressed at 11% potential alcohol to preserve brightness for secondary fermentation. Bottled in early spring and aged on lees for a minimum of 12 months. Traditional method.

• AGING: Aged sur lattes for at least 12 months before disgorgement; 6% residual sugar

• TASTING NOTES: Fine, persistent bubbles carry notes of lemon zest, green apple, toasted brioche, and wet stone. The palate shows gentle sweetness balanced by fresh acidity and chalky minerality, with a clean, lifted finish.
