The Philippon family has been farming vines in the commune of Fleys since 1936, when their great-grandfather and grandfather replanted vineyards with American rootstock in the wake of phylloxera. Today, siblings Béatrice, Benoît, and Olivier manage the 79-acre estate, bottling only the finest cuvées and selling the rest to négociants. Certified HVE (High Environmental Value), Château de Fleys is known for terroir-driven expressions of Chablis with purity, minerality, and precision.

TERROIR: From 12 acres of 50-year-old vines in Mont de Milieu, a premier cru vineyard on the right bank of the Serein River. South-facing slopes between Montée de Tonnerre and Vaucoupin. Kimmeridgian limestone with marl and fossilized oyster shells.

VINIFICATION: Hand-harvested grapes. Fermented and aged entirely in stainless steel to preserve freshness and minerality.

AGING: Stainless steel only; no oak influence.

TASTING NOTES: Classic Chablis expression with a blend of ripe citrus and orchard fruit layered over chalk, stone, and oyster shell. Medium-bodied with bright acidity, saline minerality, and a lingering, savory finish.
