This is Sauvignon Blanc with altitude (literally and stylistically). When I first tasted this, I was struck by how much it captured the cool restraint of Loire Valley Sauvignon while still feeling unmistakably Californian. No tropical excess, no heavy-handed ripeness. It’s pure, mountain-grown fruit, handled gently, and without makeup.
Allium Wines was founded by Tyler and Hannah Woods with a vision of introducing clean,
intentionally-made, high-elevation California wines to a new generation. They partnered with winemaker Matt Iaconis, known for his site-driven work at Brick & Mortar, whose approach blends technical precision with a light touch. Vincent Morrow, MS, joins as both collaborator and curator.
Named 2022 Sommelier of the Year by the Michelin Guide, Vincent is known for his sharp palate, deep knowledge, and advocacy for transparency and inclusivity in wine (we’ve done many collaborations throughout the years!). At Allium, he brings his love of high-altitude vineyards, his nose for quality above all, and his commitment to honest winemaking to every bottle. All fruit is farmed sustainably, hand-harvested at peak ripeness, and fermented with native yeast. At Allium, native fermentation is a conscious choice rooted in trust: trust in the fruit, the vineyard, and time. Rather than inoculating with commercial yeast strains, they rely entirely on ambient yeasts from the grape skins, the cellar, and the vineyard's natural microbiome. These wild yeasts are part of what makes a site unique, and their slow, layered fermentation brings complexity,
nuance, and texture to the final wine. It’s not always easy as ferments can stall or evolve
unpredictably, but that’s where the magic lives. The wine is also bottled without fining or filtration, further reflecting vintage and site.
This inaugural release, 2024 Sauvignon Blanc, is crisp and aromatic, with notes of lime leaf, yuzu, white grapefruit, and crushed rock. The palate has depth while feeling sleek and nervy, with an electric finish that lingers and begs for something to pair! It’s the kind of wine you want with chèvre, oysters, green goddess dressing, Portuguese potato salad topped with preserved tuna, or grilled shrimp skewers with chili and herbs..
