- Terroir / Soil: Calcareous clay with mixed percentages of clay and limestone. The Premier Cru site of Clavoillon sits just a stone's throw east of the famed Grand Cru vineyards on the Hill of Corton.
- Vinification: Manual harvesting. Long, gentle pneumatic pressing, “débourbage,” or “settling of the juice,” over 24 hours; then racking and running the must into the cask. Alcoholic fermentation in oak casks, 22% new (maximum 1/3 Vosges, minimum 2/3 allier).
- Aging: Gentle pressing into oak casks. Alcoholic fermentation in 22% new oak. Aged for 12 months in oak casks followed by 6 months of further aging in tank.
