Domaine Rondeau, established in 1998 by Bernard and Marjorie Rondeau in Boyeux-Saint-Jérôme, specializes in crafting traditional sparkling wines from the Bugey region. Their Bugey Cerdon Méthode Ancestrale is a distinctive rosé sparkling wine that embodies the unique terroir and winemaking heritage of the area.

- FARMING: Sustainable viticulture
- VARIETIES: Primarily Gamay (90%) with a small proportion of Poulsard (10%)
- TERROIR: The vineyards are situated on sunlit, sometimes steep slopes between 300 and 500 meters in altitude, predominantly planted with Gamay, Poulsard, Chardonnay, and Pinot Noir.

VINIFICATION: The wine is produced using the traditional méthode ancestrale:
- Harvesting: Grapes are hand-harvested at optimal ripeness to preserve freshness and aromatic potential.
- Pressing: Whole clusters are gently pressed using a pneumatic press to extract pure juice.
- Fermentation: The juice undergoes partial fermentation in temperature-controlled stainless steel tanks until reaching approximately 7% alcohol. Fermentation is then halted by chilling the tanks to retain natural sweetness.
- Bottling: The wine is lightly filtered to remove large sediments and some yeasts, leaving residual sugar. It is then bottled, and a secondary fermentation occurs naturally in the bottle, creating fine bubbles.
- Disgorgement: After sufficient aging, the bottles are disgorged to remove sediment, and then sealed with a cork for release.
- TASTING NOTES: This sparkling rosé exhibits a vibrant pink hue with aromas of red berries, notably strawberries and raspberries. The palate is light-bodied with a delicate sweetness balanced by refreshing acidity, leading to a clean, crisp finish.
- FOOD PAIRINGS: Ideal as an aperitif or paired with fruity desserts such as berry tarts, macarons, or dark chocolate confections. It also complements savory dishes like charcuterie and soft cheeses.
- SERVING TEMPERATURE: Best enjoyed well-chilled, around 8°C (46°F).
- ALCOHOL CONTENT: Approximately 8.5% ABV.
