A benchmark estate in Muscadet, Domaine du Grand Mouton crafts old-vine Melon de Bourgogne with precision and quiet intensity—this cuvée is pure, stony, and deeply rooted in place.
-
WINEMAKER: Louis Métaireau
-
FARMING: Sustainable, Organic
-
VARIETY: 100% Melon de Bourgogne
-
TERROIR: Sourced from 70+ year-old vines in the estate’s second-picked parcel. Soils are a complex mosaic of gneiss, granite, and amphibolite—key to the wine’s tension and mineral clarity.
-
VINIFICATION: Hand-harvested and fermented with native yeasts. Aged on the lees through winter in a mix of concrete and glass-lined vats. Bottled in spring by gravity without bâtonnage, fining, or filtration—preserving texture and freshness.
-
AGING: Sur lie aging in inert vessels (concrete and glass) until spring bottling
-
TASTING NOTES: Crisp and linear, with classic seaside salinity. Notes of lemon peel, green apple skin, wet stone, and crushed shell, supported by a fine leesy texture. There’s quiet depth here beneath the zing—a wine of place and patience.
-
FOOD PAIRINGS: Oysters, moules marinières, goat cheese, sushi, herbed white fish, fennel and citrus salad
