Union Sacré is a Central Coast project founded by Frenchman Xavier Arnaudin and Californian Philip Muzzy, dedicated to crafting Alsace-inspired wines with California soul. Focused on aromatic whites and cool-climate terroirs, the duo blends Old World technique with New World creativity. Their Blanc Gris—a rare, white-pressed blend of red and white grapes—is a vibrant, food-friendly wine made from Grenache Gris, Pinot Gris, and touches of other aromatic varieties. It’s a unique and refreshing expression of the cool Santa Maria Valley, brimming with coastal energy and texture.

  • WINEMAKER: Xavier Arnaudin

  • FARMING: Sustainable practices, sourcing from cool-climate, low-intervention vineyards in Santa Maria Valley.

  • VARIETY: 50% Pinot Blanc, 50% Pinot Gris

  • TERROIR: Grown in the Santa Maria Valley, a transverse valley influenced by strong Pacific breezes and morning fog. The soils—mainly sandy loam with marine sediment—yield wines with precision, bright acidity, and lifted aromatics.

  • VINIFICATION: Grapes are harvested early for freshness and pressed gently as whole clusters. Fermentation is carried out with native yeasts in stainless steel, emphasizing purity and aromatic lift. The unique white-pressed method from red and gray-skinned grapes gives the wine subtle phenolic texture and a pale, blush-toned hue.

  • AGING: Aged briefly on fine lees in stainless steel tanks to preserve freshness while adding roundness and complexity. No oak influence.

  • TASTING NOTES: Lightly hued with a silvery-pink tint, the Blanc Gris shows notes of alpine strawberry, white peach, grapefruit zest, and crushed rocks. The palate is crisp and dry, with fine texture, saline tension, and a slightly herbal edge that adds length and complexity. Clean, zippy, and refreshing from start to finish.

  • FOOD PAIRINGS: Perfect with ceviche, grilled shrimp, Niçoise salad, or fresh goat cheese. Also great with picnic fare or sushi.
