ORGANIC FARMING
NATURAL WINE
MENDOCINO and CALIFORNIA
USA
  • WINEMAKERS: Joel Burt and Eric Wareheim
  • FARMING: Organic
  • VARIETIES: 91% Carignan, 7% Zinfandel from Gary Venturi (organic farming), and 2% Vermentino from Larry Venturi (certified organic)
  • TERROIR: The Gary Venturi vineyard in Calpella, north of Ukiah, is head trained dry farmed old vines. Larry’s vineyard is on the other side of the highway, and the Vermentino is a newer block.
  • VINIFICATION/AGING:  The Carignan for this wine was pressed whole cluster as soon as the fruit was received at the winery. This method of juice extraction gives a savory and mineral-laden wine with a fine texture. The Zinfandel was de-stemmed as soon as it got to the winery, after which it was added to the press with its stems. This allowed for great red fruit character and avoided extracting too much bitterness. 10ppm sulfur was added, and after 24 hours of settling at cellar temperature, the juice was racked for native primary fermentation. Once these lots had fermented to dryness, the lots were aged in a combination of large format oak and stainless steel on light lees until bottling. The wines went through native malo-lactic fermentation at cool temperatures. Following a blending trial,  In a blending trial, a small amount of Vermentino was added to the blend à la Provence where they call the variety Rolle. A small amount of sulfur was added prior to bottling. This wine has not been fined or filtered.
  • TASTING NOTES: Savory blueberry, boysenberry, and hibiscus. On the palate, it displays vibrant acidity, with notes of lime, green strawberry, and minerality with a bone-dry finish.
