Château du Cedre 'Cedre Heritage' Cahors, Sud-Ouest, France 2021

- Varieties: 95% Malbec, 5% Merlot
- Terroir: The vines of Château du Cèdre root in two different types of soil: The terroirs, composed of stony clay and limestone, give straight wines with fine tannins, whereas more powerful and dense wines derive from soils composed of clay, sand and rich in pebbles.
- Vinification: Three weeks of skin maceration, with punching down of the cap at the beginning of fermentation. Malolactic fermentation in tanks.
- Aging: 80% of the wine is tank aged, 20% barrel-aged (2-year-old barrels) for 16 to 18 months.
- Tasting notes: A pure product of Cahors, made of Malbec complemented by some bunches of Merlot. Its upright and welcoming character will tell you a lot about the appellation and its wines. An intense and fresh nose, with blackcurrant, wild pepper and mint.
- Pairing: A smooth and delicious wine that requires simple and honest food: some grilled vegetables, creamy polenta with simmered meat, matured cheese ... An enthusiastic wine, full of energy, succulent and welcoming. The ideal guest at your table.
Pascal Verhaeghe and his brother, Jean-Marc, bring a welcome refinement to the wines of picturesque Cahors, located about an hour and a half east of Bordeaux. Their father began making wines at Château du Cèdre in the 1970s, and the fun-loving sons took over in the 1990s, banning all herbicides and chemicals, and adopting a domaine motto: “Move forward, experience new ways.”
Cahors wines are made predominantly from Malbec and are known for being powerful, rich and dark. Pascal and Jean-Marc build on these terroir-driven qualities to produce wines that are very polished and remarkably balanced. These wines are quite approachable when young, but they also age exceptionally well.
The estate’s signature cedar tree also graces the labels of their Cedrus wines. The well-priced reds and whites are a great introduction to the wines of southwest France.
