Domaine Rollin Père & Fils is a fourth-generation family estate based in Pernand-Vergelesses, a village tucked into the hillsides just west of Corton. Revered for their meticulous vineyard work and classical style, the Rollin family has quietly built a reputation for producing precise, mineral-driven wines that express the underappreciated terroirs of the northern Côte de Beaune. Their Pernand-Vergelesses Blanc is a benchmark example of the appellation’s elegant, limestone-influenced Chardonnay.
-
WINEMAKER: Rémi Rollin
-
FARMING: Lutte Raisonnée (sustainable practices)
-
VARIETY: 100% Chardonnay
-
TERROIR: Sourced from multiple parcels in Pernand-Vergelesses, primarily on east- and southeast-facing slopes with stony marl and limestone soils at mid-slope elevations. A cooler microclimate contributes to vibrant acidity and slow ripening.
-
VINIFICATION: Fermented with native yeasts in barrel, with gentle bâtonnage during élevage. Partial malolactic fermentation depending on vintage character.
-
AGING: Aged for 10–12 months in French oak barrels, approximately 15% new, followed by a short rest in tank before bottling.
-
TASTING NOTES: Refined and linear, with aromas of lemon curd, white flowers, crushed stone, and a touch of hazelnut. The palate is elegant and focused, showing tension between creamy texture and chalky minerality, with a clean, lingering finish.
-
FOOD PAIRINGS: Excellent with poached fish, roast chicken with tarragon, shellfish, or creamy vegetable gratins.
