Heron’s philosophy and wines are direct reflections of Laely’s spirit – pioneering, adventurous, daring, smart, adaptable, thrill seeking, irreverent, non-traditional and international.
- Winemaker: Laely Heron
- Farming: Organic
- Variety: Cabernet Sauvignon
- Terroir: Most of the Cabernet Sauvignon for this bottling comes from Paso Robles.
- Vinification: Grapes picked ripe at 24 brix and are destemmed directly to tank. They spend a 48-hour cold soak before fermentation, where 3 pump overs per day are performed for 10 days.
- Aging: The finished wine is aged for 10 months in a combination of neutral and new French oak barrels.
- Tasting Note: Deep plum with brick red tinge. Ripe dark cherry, cedar, sandalwood, pomegranate undertones. Complex cherry flavors, dried herbs, caramel, and the warm subtle vanilla of French oak. A silky and supple finish with nice length.
