- Vinification: Fermentation with native yeast at low temperatures. Macerated for 30 days with pumping over the first 6 days twice a day then very light once a day for another 10 days. Fermentation with native yeast at low temperatures.
- Aging: 50% Stainless Steel & 50% Large Neutral Oak Cask for 2 years.
- Tasting Notes: Hints of cherry and dusty earth on the nose. Medium bodied on the palate, with cherry, cassis, cedar, and a hint of forest floor. Dry and structured, this blend is the perfect accompaniment to slow-roasted meats and hearty sides.
