Paitin is a historic family-run estate in Neive with winemaking roots dating back to 1796. Best known for its elegant Barbarescos, the Pasquero-Elia family applies the same commitment to terroir expression and traditional farming across all their wines. ‘Elisa’ is a rare white in the portfolio—named after the matriarch of the family—crafted from Arneis grown in sandy Roero soils, offering a bright counterpoint to the estate’s red wines.

TERROIR: Sourced from the Roero area within the Langhe, defined by marine-origin sandy soils that lend finesse and aromatics to the Arneis grape. Moderate elevation and diurnal temperature shifts preserve natural acidity.

VINIFICATION: Gentle pressing with spontaneous fermentation using native yeasts in stainless steel. No malolactic fermentation to retain freshness.

AGING: Aged in stainless steel tanks for 6 months on fine lees to enhance texture and complexity.

TASTING NOTES: Fresh and aromatic, with notes of white peach, chamomile, pear skin, and citrus zest. A subtle saline minerality and vibrant acidity provide tension and lift, finishing with a gentle almond bitterness.
