A prestigious grower-producer based in the iconic village of Bouzy, Pierre Paillard has spent eight generations mastering Pinot Noir-driven Champagnes. Known for its expressive, terroir-focused style, the estate emphasizes careful vineyard management and restrained intervention, allowing the elegance of Grand Cru Bouzy to shine through.

• VARIETY: 70% Chardonnay, 23% Pinot Noir, 7% Bouzy Rouge (still Pinot Noir wine)
• TERROIR: Vineyards in the Grand Cru village of Bouzy, renowned for chalky soils rich in limestone, southeast exposures, and gentle slopes. This unique terroir provides complexity, precision, and pronounced minerality.
• VINIFICATION: Native yeast fermentation in stainless steel tanks; partial malolactic fermentation; addition of estate-produced Bouzy Rouge for rosé color and structure.
• AGING: Aged minimum 36 months on lees in bottle; Extra Brut dosage (low dosage under 3 g/L).
• TASTING NOTES: Elegant, fresh, and nuanced with aromas of wild strawberries, raspberry, citrus blossom, and delicate rose petal. On the palate, vibrant acidity, delicate mousse, and flavors of red berries, blood orange, pastry dough, and subtle chalk-driven minerality linger through the finish.
