The "Vice Versa" wine is a unique blend that originates from the village of Visan in the Côtes du Rhône AOP. However, it has been declassified to Vin de France due to its unconventional co-fermentation process. Made of 50% Cinsault and 50% Viognier sourced from certified organic vineyards spanning a total area of 15 hectares, the wine is crafted from a single parcel of each grape variety, harvested simultaneously from the same terroir. The grapes are carefully harvested by hand and vinified together using indigenous yeasts in stainless steel tanks. After de-stemming, the grapes undergo a six-day maceration period, followed by a co-fermentation press. The wine is then bottled on a fruit day without any filtration, with only a minimal addition of sulfites (30 ppm total) to preserve its natural characteristics.
