David Duband Charmes-Chambertin Grand Cru, Burgundy, France 2021

The quality of David Duband’s wines has steadily advanced since he took over his family’s domaine in 1991. In 1999 he began the move away from conventional farming and became completely certified organic in 2006. In 2005, his friend and business partner, François Feuillet, managed to buy vineyards from Jacky Truchot, which included privileged old-vine parcels in the Grand Crus, Clos de la Roche, and Charmes-Chambertin.

- Terroir: The vines planted here in the 1920s give this wine tremendous depth, which can only be revealed with time in the glass and more importantly time in the cellar. This comes from the grand cru, Mazoyeres-Chambertin, a vineyard that can be named on the label as Charmes-Chambertin. Mazoyeres is different than most wines labeled as Charmes-Chambertin as the vineyard has a geological and climactic difference. It lies in the path of the Combe Grisard, which brings more cool air and soils that are more stony and deep than the wine coming from the original Charmes-Chambertin located just to the north.
Shallow brown soil (10-20cm) before limestone–not alluvial, as one could expect from Maz.
- Vinification: Whole-cluster fermentation. A small dose of SO2 (7ppm) is made at crush and pigeage (punchdowns) is made by foot to not break stems and begins after fermentation starts—5 to 7 total throughout the fermentation. Remontage (pump over) is only used if there is H2S (reductive elements), which is very common in organic wines. The fermentation is usually 17-18 days, then pressed and settled in tanks for 2-3 weeks to allow for whole cluster ferments to settle more clearly—destemmed ferments clarify quicker. Racked for the first time before the end of the year.
- Aging: Aged 14 months in 225l barrels, 50% new, racked to steel tanks 2 months before bottling. No fining or filtration.
- Tasting Note: Aromatic with dark red fruit. The palate is full, with spicy, textured.

Domaine Chevallier Bernard 'Marestel' Roussette de Savoie, Savoie, France 2022

Chantal and Jean-Pierre Bernard are the husband and wife team who, after studying oenology in Beaune, took over the old Chevallier property in Jongieux in 1996. This picturesque town is the "capital" of the white grape Altesse. It sits east of Lyon near the base of the steep Mont de la Charvaz, named by serious cyclists as one of France's toughest climbs (slopes may reach up to 45 degrees!). It is on the slopes of this mountain, on the "Marestel" hillside cru above the village, that many of the best parcels of Altesse are planted. This personality-filled grape is obligatory in all AOC Roussette de Savoie wines.

The Savoie region of eastern France is a hidden treasure of alpine viticulture, nestled near the Swiss border where limestone cliffs rise dramatically from glacial valleys. It’s here, on the steep, south-facing slopes of Mont de la Charvaz, that Chantal and Jean-Pierre Bernard farm their 12.5 hectares of vineyards in the small commune of Jongieux—considered the heartland of the white Altesse grape that is locally known as Rousette.
Chantal & Jean-Pierre Bernard met while studying oenology in Beaune, France. They fell in love and after they finished studying they returned to Jean-Pierre’s roots in the Savoie in 1996 to revive the historic Chevallier property. Together, they’ve made it a family affair, now joined by their son, while also cultivating a deep respect for tradition and the environment. The couple farms sustainably under agriculture raisonnée principles, using no oak on their whites and aging wines in stainless steel and cement to preserve purity and expression of terroir.
The 2022 ‘Marestel’ Roussette de Savoie is 100% Altesse from their prized Marestel cru—an exceptional slope of limestone and glacial stones overlooking the Rhône Valley. Only 7,000 bottles are produced annually. The wine is aromatic and refined, with a bouquet of dried pineapple, sweet almond, and a touch of smoke. On the palate, it offers richness and lift: exotic citrus, a fine bitter edge, and a crystalline mineral finish that lingers with elegant precision. Truly a unique and thought provoking wine to try!

Domaine Christophe et Fils 'Montee de Tonnerre' Chablis 1er Cru, Burgundy, France 2022

- TERROIR: The topsoil is composed of decomposed Portlandian limestone scree, Kimmeridgian limestone marls and marne, a limestone-rich clay. It’s less deep than its illustrious neighbor to the north, 1er Cru Montée de Tonnerre, but deeper than most of the left bank vineyards of Chablis.
- VINIFICATION: Aged in tank overnight, then racked off the heavy sediments after one day before beginning its low temperature fermentation. The spontaneous wild yeast fermentation lasts between 1-2 months and takes place in stainless steel (80%) and the remainder in 228-liter oak barrels (new, 1, 2 and 3 year-old, the total new wood is approximately 7%). Battonage (stirring) is sometimes made, but only in the steel tanks and the frequency depends on the vintage—warm years nothing and in colder ones no more than two times. The first SO2 addition is made after the press before fermentation and the second (and sometimes the last) after both fermentations have finished.
- AGING: One year in stainless steel (80%) and the remainder in 228-liter oak barrels (new, 1, 2 and 3 year-old, the total new wood is approximately 7%). It is fined and filtered.

- Terroir: The terroir of the Clos de l'Arlot blanc is rugged and rocky. The hillsides are so steep that all work on the vines, often performed with the help of machinery, is done by hand here.
- Vinification/Oak Usage: Native yeast fermentation at low temperature to capture the best of the fruit character of the grapes and express the radiance of the great Chardonnay.
- Aging: 12 months in oak barrels, with 20% new barrels, and 3 months in vats before bottling.
- Tasting Notes: The nose is ripe and exotic, with aromas of pear and green apple and familiar notes of fresh flowers, apricot and Muscat grapes. This freshness is accompanied by generous hints of roast hazelnuts and brioche. This wine is fleshy on the palate, with notes of spices and citrus fruit, and offers soft minerality and pleasant salinity. History of the Domaine:
Located just south of Nuits Saint Georges, in the village of Prémeaux-Prissey, is Domaine de l’Arlot, a winery formally established in 1987, but with a history that extends over 100 years back to the late 19th century. The domaine is operated out of a 200 year old building found within the Clos de l’Arlot, a 4 hectare walled vineyard created by Jean-Charles Vienot at the end of the 18th century. His son later expanded the estate, and eventually the domaine came to hold two Premier Cru monopoles: Clos des Forets Saint Georges and Clos de l’Arlot, both located within Nuits Saint Georges. Today, these wines are a benchmark expression for the village of Nuits Saint George, showcasing the hearty complexities of Pinot Noir when grown in the limestone-laden Nuiton soils. Exceptionally, although in the heart of Pinot Noir country in Nuits, Domaine de l’Arlot has also come to be a force for Chardonnay production in the village, producing complex, forward and plush Chardonnays that are unlike any other in the Cote de Nuits. The winery’s biodynamic practices and hands-off approach to vinfication allow their fruit to shine, and each vineyard is vinified with respect to the power and finesse of its fruit.
