Girolamo Russo is a renowned estate located on the slopes of Mount Etna in Sicily, producing wines that express the volcanic terroir of this unique region. The winery is known for its commitment to organic farming and traditional winemaking techniques, producing wines that highlight the complexity and minerality of the soils surrounding the active volcano.

FARMING: Certified Organic farming with a focus on sustainability and biodiversity. The vineyards are planted at high altitudes (600-700 meters above sea level), benefiting from the rich, volcanic soils of Mount Etna.
VARIETY: 94% Nerello Mascalese, 6% Nerello Cappuccio
TERROIR: The 'San Lorenzo' vineyard is located on the northeastern slopes of Mount Etna, where the volcanic soils, combined with the Mediterranean climate, create ideal growing conditions. The altitude and the constant presence of winds allow for a slow, gradual ripening of the grapes, contributing to the wine's vibrant acidity and complexity.
VINIFICATION: Fermentation takes place in temperature-controlled stainless steel tanks, with 15-20 days of maceration on the skins for an extended period to extract depth and structure. The wine undergoes spontaneous fermentation with native yeasts to maintain its authenticity and the expression of its terroir.
AGING: Aged for 18 months in 2,500 L barrel and used barriques, followed by several months in bottle before release. This aging process adds a subtle touch of oak while preserving the purity and minerality of the wine.
TASTING NOTES: The 2021 'San Lorenzo' Etna Rosso is a captivating wine with a deep ruby color and expressive aromas of red berries, citrus zest, and earthy undertones of volcanic ash and dried herbs. On the palate, it offers a silky texture with vibrant acidity and finely integrated tannins. Flavors of cherry, raspberry, and pomegranate are balanced by a mineral backbone and a touch of smokiness, leading to a long and complex finish.
FOOD PAIRINGS: A fantastic pairing with roasted meats, especially lamb or grilled pork, as well as charred vegetables, pizza with rich toppings, or aged cheeses like Pecorino.
